Con platillos como \u201ctacos de carnitas de zetas\u201d y \u201chuarache de rabo de toro\u201d, el chef Mateo Salas ofrece una novedosa experiencia culinaria en el restaurante Jacinto 1930, donde combina lo tradicional y lo contempor\u00e1neo de la comida mexicana.<\/p>\n

En este lugar, ubicado en una casa antigua de este Pueblo M\u00e1gico, el chef mexicano se inspira en el ma\u00edz para crear un variado men\u00fa integrado por platillos elaborados con productos org\u00e1nicos de primera calidad, elaborados en compa\u00f1\u00eda de un equipo de cocineros, de Oaxaca, Quer\u00e9taro, Michoac\u00e1n, Nayarit, Guadalajara y San Luis Potos\u00ed.<\/p>\n

Con platos como \u201caguachile de camar\u00f3n seco de Nayarit en tostada de chile con ajonjol\u00ed\u201d, \u201ctetela de frijol con chile de \u00e1rbol y pulpo asado en mantequilla de chintextle\u201d, \u201ctacos de carnitas de zetas\u201d y \u201chuarache de rabo de toro\u201d, entre otros, este restaurante explora las recetas tradicionales, busca los productos originales y org\u00e1nicos para presentarlos de una manera honesta, destac\u00f3 Salas.<\/p>\n

\u201cEn Jacinto 1930 hay un trabajo muy importante de investigaci\u00f3n y recuperaci\u00f3n de productos de toda la Rep\u00fablica, no s\u00f3lo de Guanajuato y ese es un trabajo que toma tiempo y que es una responsabilidad de los restaurantes; el poder explicarle a nuestro cliente de d\u00f3nde viene el producto y por qu\u00e9 son buenos, para as\u00ed fomentar una cultura de consumo consiente\u201d, explic\u00f3.\n<\/p><\/blockquote>\n

En entrevista en el marco de la Cumbre Internacional de la Gastronom\u00eda Guanajuato \u00a1S\u00ed Sabe! 2016, el chef comparti\u00f3 que para poder hacer posible la recuperaci\u00f3n de productos agr\u00edcolas org\u00e1nicos a trav\u00e9s de este restaurante, ha sido necesario crear una red de comunicaci\u00f3n de proveedores directamente hacia el productor.<\/p>\n

Ello, dijo, es uno de los distintivos de Jacinto 1930, as\u00ed como el ma\u00edz; \u201cno importa cu\u00e1l es la receta, pero en pr\u00e1cticamente en todos los platillos hay ma\u00edz y si no, est\u00e1n acompa\u00f1ados de una tortilla\u201d.<\/p>\n

En este lugar, aclar\u00f3 Salas, no se busca inventar una nueva cocina mexicana, sino que \u201cpretendemos llenar de emociones y de sabores que la gente conoce y reconoce\u201d.<\/p>\n

El restaurante, que forma parte de Levain & Co. Co, destaca adem\u00e1s por contar con un dise\u00f1o del arquitecto Alberto Laposse, quien combin\u00f3 elementos tradicionales y contempor\u00e1neos.<\/p>\n

Muestra de ello son el techo, construido de cobre michoacano, a trav\u00e9s del cual se alcanza a ver el cielo; el piso de mosaicos en tonos cobrizos y negros que evoca a las t\u00edpicas cocinas mexicanas con un dejo de elegancia, y la llamada mesa del ma\u00edz, donde se aprecia la forma en que se preparan productos hechos con este alimento prehisp\u00e1nico.<\/p>\n
